This St. Patrick’s Day I have something green and yummy, but it’s not beer! Celebrate the luck of Irish with a green-themed snack board, a shamrock smoothie, and of course, you can’t forget dessert! Satisfy your sweet tooth with my healthier rainbow puppy chow!

St. Patrick’s Day Snack Board

We love a good snack board and they are the perfect way to add variety to snack time. They are also a really fun way to get in lots of vegetables and fruits plus some fun foods too. You can mix up the vegetables, dips, and even add mini sandwiches or grilled cheese to make it a meal. 

Ingredients for the St. Patrick’s Day Snack Board:

Green grapes

Siete Lime Chips

Kiwi

Celery

Snap peas

Hummus

Cucumbers

Shamrock+Shake

Dairy-Free Shamrock Smoothie

Smoothies are a go-to for me every single morning. I love them because they are so versatile and the possibilities are endless. This shamrock smoothie is made of whole foods and is high in fiber which will keep you feeling fuller longer. This would be a fun way to start St. Patrick’s Day or a delicious afternoon snack.

Ingredients for the Dairy-Free Shamrock Smoothie:

2 bananas, frozen

1 avocado, small

2 dates

2 tbsp flaxmeal

½ tsp vanilla extract

½ tsp mint extract

1-2 cups unsweetened almond milk

Mini chocolate chips, optional for garnish

Directions for the Dairy-Free Shamrock Smoothie:

Blend all ingredients in a high-speed blender until smooth. Split between two cups and top with mini chocolate chips, optional.

Healthy Puppy Chow

Healthier Rainbow Puppy Chow

This is one of my all-time favorite treats and to make it festive I added some sprinkles to go with a rainbow theme to keep it festive. Puppy chow usually has double to sugar but I’ve used less sugar and actually made my own powdered sugar using coconut sugar. Coconut sugar doesn’t raise your blood sugar levels as dramatically as white sugar so it’s a good alternative.

Ingredients for the powdered sugar: 

1  cup coconut sugar

3 tbsp 1:1 gluten-free all-purpose flour

Add coconut sugar and flour to a high-speed blender and blend for 30-45 seconds until it becomes a light, powder consistency. Let sit for 1-2 minutes to settle before taking the lid off.

Ingredients for the Healthier Rainbow Puppy Chow: 

8 cups Chex cereal

1 cup chocolate chips

½ cup peanut butter, no sugar or oil added

¼ cup coconut oil, measure out when melted

1 homemade powdered sugar recipe, see above

1/4 cup sprinkles

Directions for the Healthier Rainbow Puppy Chow: 

  • In a large bowl, add the cereal and set aside.

  • In a medium glass bowl, add the chocolate chips, peanut butter, and coconut oil. Microwave for 30-60 seconds, stir, and microwave for another 30 seconds or until smooth and well blended.

  • Pour the chocolate mixture over the cereal and stir until the cereal is evenly coated. Add cereal mixture to a brown paper bag (or 2-gallon zip lock bag).

  • Add powdered sugar and shake until the cereal is evenly coated. 

  • Then add sprinkles and shake well. Optional to save some to sprinkle on top.

  • Spread mixture onto waxed paper to cool and store in an airtight container in the refrigerator.
