Roasted Chickpeas

I first had roasted chickpeas at my mom’s house. She was making dinner for a friend and I snagged a few off the pan and it truly was love at first crunch. This is one of our favorite snacks. London LOVES them and asks for them regularly. They rarely last long around here.

Chickpeas are full of protein and fiber and this recipe makes them the perfect salty snack to munch on in the afternoon or while on the go running errands. Would also make a yummy addition to a salad.

An easy snack because I am all about that these days with two little girls running around! I hope you enjoy them just as much as we do. I dare you to make them last longer than a day!

Roasted Chickpeas:

Ingredients:

1 can chickpeas (drained)

½ tsp sea salt

½ tsp garlic powder

½ tsp olive oil

*For an added kick I like to sprinkle a little cayenne pepper on.

Directions:

Mix ingredients together and put on baking sheet. Cook at 400 for 20 minutes, shake, then roast for 20 minutes, shake, then roast for another 15 minutes.
