Hawaiian Chicken Nachos

These nachos are sweet and tangy and remind of a tropical island. I’m thinking a trip to Hawaii needs be planned ASAP.

I’ve literally made these Hawaiian Chicken Nachos twice in the past 3 days because oh my word the flavor is out of this world. It’s sweet and salty and oh so good. The whole family is obsessed. Which is a win-win in my book.

What I love about this chicken recipe is that it calls for 6 simple ingredients: chicken breasts, bell pepper, purple onion, pineapple, garlic cloves, and bbq sauce. And it’s packed full of flavor, your taste buds will thank you. Simply add everything to the crockpot for 3-4 hours and you are done. Add the chicken to chips, taco shells, or brown rice for a quick weeknight meal.

Hawaiian Chicken Nachos

Ingredients:

1 lb chicken breast

1 red bell pepper {chopped}

½ red onion {diced}

*2 cups fresh or canned pineapple

3 cloves garlic {minced}

*1 cup bbq sauce

1 bag Siete Tortilla Chips {or your favorite brand}

½ cup sweet cheddar cheese {shredded}

Optional toppings: avocado, bell peppers, cilantro, purple onion

*Note:

  1. If you’re buying canned pineapple make sure it’s just the pineapple and juice and no added sugar.
  2. Try to get a bbq sauce without added sugar and as natural as possible.

Directions:

  1. Combine the first 6 ingredients to crockpot and cook on high for 3-4 hours or low for 6-8 hours.
  2. Once cooked, use a spoon or fork to shred the chicken
  3. Add chips to a baking sheet and top with chicken mixture and cheese.
  4. Broil on high for 5 minutes or until cheese is melted. Keep a close eye on it as it can burn easily.
  5. When cheese is melted top with your favorite toppings and enjoy immediately.
