Slow Cooker Hawaiian BBQ Chicken Wraps

Happy SPRING! Although it feels nothing like spring here in Iowa {sigh}, I’m hopeful it will show up sometime soon! In the meantime, it’s got me craving all things fresh + green making these Slow Cooker Hawaiian BBQ Chicken Wraps the perfect recipe to share with you to welcome Spring.

If you remember, I recently posted a recipe for Hawaiian BBQ Chicken Nachos, and ever since I’ve been absolutely obsessed with the flavor---it’s the perfect combo of sweet and savory. And I love that it's simple ingredients and all you have to do is add to the slow cooker and you’re done until dinner time.

My favorite way to eat this Hawaiian BBQ Chicken is on a rainbow chard leaf topped with avocado, carrot slices, purple cabbage, green onions, and cilantro. There is so much flavor, I forget that I am eating lots of veggies in the process. You could also serve with cauliflower rice, mixed greens or it would be delicious in a corn tortilla.

Embrace The Slow Cooker All Year Round

I used to think the slow cooker was just for winter months but I’ve quickly changed my mind. It allows me to cook a yummy meal while we are playing outside or headed to the pool for the day. No turning on the hot oven and dinner time is a breeze. This Hawaiian BBQ Chicken recipe is the perfect spring/summer dish and one we will be using all the time.

Once the chicken has cooked for 3-4 hours on high {or 6-8 hours on low} you can simple shred it with a fork {it should shred easily}. When the chicken is shredded, eat it however you’d like!  In a yummy rainbow chard or lettuce wrap, cauliflower rice, or as a taco. And top with your favorite toppings to add even more flavor.

Slow Cooker Hawaiian BBQ Chicken Wraps


1 lb chicken breast

½ red onion {diced}

*2 cups fresh or canned pineapple

3 cloves garlic {minced}

*1 cup bbq sauce

Rainbow chard {or lettuce}

Toppings: avocado, purple cabbage, shredded carrots, green onion, and cilantro


  1. If you’re buying canned pineapple make sure it’s just the pineapple and juice and no added sugar.

  2. Try to get a bbq sauce without added sugar and as natural as possible.


  1. Combine the first 5 ingredients and add to a slow cooker. Cook on high for 3-4 hours or low for 6-8 hours.

  2. Once cooked, use a spoon or fork to shred the chicken

  3. Assemble rainbow chard with desired toppings.
