Okay, ladies, this may be literally the easiest recipe out there. And bonus: it makes a ton so you can have leftovers the next day! Woohoo! I am allllll about the leftovers. One less meal to cook and think about.
Crockpot recipes have been my go-to lately. Throwing ingredients in, turning on and walking away until dinner time. My kind of meal. This recipe is the perfect meal for those busy days where you are running around until 6 pm and helps avoid those drive-thru lines.
I actually just made this last night so that I could have it on hand for the next few days. And it is so versatile…make tacos, salad, or just eat it as is.

2 pounds chicken
1 ½ cup salsa
¼ cup chopped cilantro
Juice of two limes
Place ingredients in crockpot and cook on high for 4 hours or low for 8 hours. Once done shred in Kitchen Aid and enjoy!
