Tortilla Encrusted Chicken Tenders

If you have been following me for even a minute on Instagram {you're not?! Let's be friends!} then you know how much I love Siete Foods. Their products are absolutely incredible and not only taste amazing but are super clean--which I totally love. They sent me some of their products to try and get creative with in the kitchen. They make different kinds of tortilla chips {the nacho ones are my fave!} and tortillas.

I have loved making quesadillas with their tortilla's using goat cheese. It's my go to lunch right now. And then these Tortilla Encrusted Chicken Tenders for last night's dinner did not disappoint. Lots of flavor and a quick week night dinner. 

The girls absolutely loved them as well as the hubs {which is really who I am trying to impress!}. I usually ask him if a new dinner is a "repeat" or not and he said this one is definitely a repeat. 



1 pound chicken breasts cut into pieces

1 egg

2 Tbs GF flour {or almond flour}

3 1/2 ounces of Siete Foods Nacho Tortilla Chips, crushed

1 tsp garlic powder

1 tsp cumin 

1 tsp salt 

Fresh Cilantro, for garnish


Preheat oven to 400F.

Add 3/4 teaspoon salt to chicken tenders. Place flour, remaining 1/4 teaspoon salt, garlic powder, and cumin in a shallow bowl. Whisk the egg in a small bowl.  Place tortilla chips on another plate.  Dredge each tender lightly in flour mixture, then egg (shaking off excess), then coat with crushed chips. Bake about 10 to 12 minutes on each side or until cooked through.
