It’s Christmas time and I am here for it. I’ve been baking away in my kitchen all week making all the yummy (and healthier) cookie recipes to share with family and friends. I’ve been wanting to make Peanut Butter Blossom Cookies but so many have way too much sugar and I was determined to make a healthier version. With a little tweaking and experimenting, these healthier Peanut Butter Blossom Cookies were born. And just in time to bring to a Christmas party!

Apparently my husband doesn’t like the classic peanut butter blossom cookies but I made him try my version and he LOVED them. You know it’s good when it’s husband approved. These Healthy Peanut Butter Blossom Cookies taste just like the classic but much lower in sugar. And they are full of melt in your mouth goodness that makes it hard to stop at just one. Good thing they are small so basically 2-3 count as 1….right?! I’m going with that logic anyways!

The Easiest Recipe

These healthier peanut butter blossom cookies are seriously the easiest cook you will ever make. All you need is one bowl to mix everything together, roll the dough in balls, bake, press the chocolate in the middle, and enjoy. How simple and easy is that?! You know I love easy recipes but this one is on a whole new level of easy and completely foolproof so you won’t be able to mess it up.

I made these as part of a cookie platter along with some other yummy cookies like these frosted gluten-free sugar cookies, double chocolate peppermint cookies, and chocolate chip peppermint cookies. They are the perfect addition to your cookie platter or by itself for your next party. Either way, they are sure to be a huge hit among your family and friends. And don’t tell them they are a healthier version until after they try one…it’s always fun to see the look of shock!

Just 7 Simple Ingredients

The best part about this recipe? It’s only 7 simple ingredients that I would bet you already have on hand or you can easily grab at your local grocery store. Here’s what you need to make these Healthier Peanut Butter Blossom Cookies:

Peanut Butter

Coconut Sugar

Pure Vanilla Extract

Baking Soda

Salt

Egg

Chocolate Bar

Love when simple ingredients come together to make something so delicious. You can totally use chocolate chunks instead of a chocolate square to push in the middle of the cookies. I did this too, I put 2-3 chocolate chunks in the middle of the cookies and they were just as yummy.

Healthy Peanut Butter Blossom Cookies

Ingredients:

1 cup creamy peanut butter

1/3 cup coconut sugar + 1-2 tbsp for dipping

1/2 tsp pure vanilla extract

1/2 tsp baking soda

1/4 tsp salt 

1 egg (can sub a flax egg)

2 dark chocolate bars, I used @hukitchen 

Directions:

1. Heat oven to 350. 

2. Beat peanut butter, coconut sugar, vanilla, baking soda, and salt together until well combined. Add egg and beat well.

3. Shape dough into balls and dip into coconut sugar (you just want a nice dusting on top) and place on a cookie sheet.

4. Bake for 8-9 minutes and immediately press the chocolate into each cookie. Let cool and store in the fridge.
