My Favorite 20-Minute Veggie Fajitas

I love easy meals + that’s probably why I love these veggie fajitas. They take less than 20 minutes to make, making weeknight dinners a breeze! Plus, they are a one pan dinner aka easy clean up. I hope this meal convinces you that eating healthy (and plant based) is incredible simple + easy.

And don’t be afraid to make them your own! Get creative with what veggies you use and top to your hearts desire. My personal favorite is avocado or guacamole and fresh pico. These are perfect for prepping ahead too. I prepped these in the morning so all I had to do was add the to a baking sheet + bake!

My Favorite 20-Minute Veggie Fajitas

1 onion, sliced

2 bell peppers, sliced

1 head broccoli, cut in pieces

8 oz mushrooms, sliced

1/4 cup avocado oil

1/2 tsp cumin

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp paprika 

Optional but highly recommend: 1 can of black beans and your favorite pico or salsa

Favorite tortilla shells

  1. Add all veggies to a big bowl.

  2. Then mix the avocado oil + spices. Pour onto veggies and stir well.

  3. Add veggie mixture to a baking sheet and bake at 375 for 15-20 minutes.

  4. Add black beans and veggies to tortilla and any toppings. Enjoy!
