Sweet Potato Toast

I can't get over how yummy sweet potato toast is. This really shouldn't be a surprise since I'm obsessed with all things sweet potatoes! I think my youngest shares my love as well... she is known to devour 3 sweet potatoes at a time! Needless to say she loved today's lunch! Lunch time came quickly and we are a bit bare on groceries so I had to think of something quick!

Here's how to make sweet potato toast:

  1. Slice sweet potato {you will want to make them somewhat thin slices}
  2. Place sweet potato on toaster oven rack and bake at 450 for 10-12 minutes. {I flipped mine halfway through}
  3. Or use a toaster and toast them! {Will probably have to "toast" them multiple times until soft}
  4. Once cooked, top with your favorite toppings!

Today's toast was topped with avocado, arugula, tomato and a pinch of sea salt.

Another yummy combination is almond butter, banana and unsweetened coconut flakes.
