Protein Mint Chocolate Square Cookies

I love baking on Friday's with the girls. It's our time together teaching them about ingredients and letting them pour, stir...and, of course, sticking their little fingers in everything to make sure it's yummy. 

This week I decided to try a new recipe that did not disappoint. I used the base of the Paleo Chocolate Chip Cookies {a staple in our house!} but left out the nuts and chocolate chips and instead added Square Organics bar pieces. I split the dough below and used two different types of Squares. London chose the Chocolate Covered Peanut Butter Square and I chose the Chocolate Covered Mint Square. Both were amazing. These cookies are so soft and the perfect texture.

Protein Mint Chocolate Square Cookies

Ingredients:

3 cups almond meal

2 Chocolate Covered Mint Squares {cut in small pieces}{Can split the dough and use different Squares}

½ tsp baking soda

¼ tsp salt

⅓ cup honey

2 TBS melted coconut oil

½ tsp vanilla extract

1 egg

Directions:

1. Preheat oven to 350.

2. Add dry ingredients together but leave out the Squares.

3. Whisk wet ingredients together and then add to dry ingredients until well combined.

4. Mix in Squares. Scoop cookies on baking sheet and press down with two fingers to flatten cookie.

5. Bake 10-13 minutes. Best when warm. I love keeping leftovers {if there are any!} in the freezer.
